Oatmeal Protein Pancake

Quick, healthy and tasty

  • 2 eggs
  • 1/2 cup cooking oats
  • 1 banana, or 1 grated apple or 1/2 pumpkin puree
  • 1 TBSP Chia Seeds
  • 2 TBSP pecans
  • 1 tsp cinnamon
  • 1 -2 TBSP Raisins (optional)

 

Mix all together and cook in frying pan with coconut oil

Makes 2 pancakes

I make 2 -3 X’s the recipe and toast extra pancakes with nut butter for a protein power breakfast.
